Chocolate Bliss Balls
Ingredients:
half a jar of almond spread
250g or so of organic nuts.
1/2 cup of raw cacoa powder (to taste)
2 big handfuls of shredded coconut
4-5 heaped tablespoons of coconut oil (melted)
shredded coconut
2 teaspoons of raw honey
What to do:
Blend all the ingredients in a big bowl using a wooden spoon. Grab little handfuls and form into “balls” then roll in shredded coconut and place on a tray. Place in the fridge for 1 hour. Enjoy!
Coconut & Date Cookies
Ingredients:
125g melted butter
2 tablespoons of melted Niulife coconut oil
2 teaspoons baking powder
200g diced dates
50g desiccated coconut
100g almond meal
1 egg
100g crushed peanuts
Method:
Melt butter and coconut oil is saucepan. Add baking powder and mix well. Mix in dates. Allow mixture to cool. Then add beaten egg, crushed peanuts, almond meal and desiccated coconut. Mix well. Mixture should be moist.Roll into balls and flatten out onto a greased baking tray. Place in oven at 160 degrees for 15 minutes. Allow to cool before taking off the tray.

Raw Chocolate Brownies
Ingredients:
2 cups medjool dates, pitted
1 cup almond meal
1 cup chopped walnuts
2 tablespoons extra-virgin coconut oil, melted 1⁄2 cup raw cacao powder
1⁄4 cup raw cacao nibs
2 tablespoons organic desiccated coconut
What to do:
Place dates, almond meal, walnuts, coconut oil and cacao powder in a blender or food processor and whizz until well combined. The mixture should be a bit crumbly, but not too dry, so add another teaspoon of coconut oil if you need to. Now stir in the cacao nibs, but don’t blend them because we want them to stay super-crunchy.
Spoon the mixture into a brownie tin, press down firmly and top with desiccated coconut. Place in the fridge for 2 hours to set (if you can hold off eating them for that long)!
Cut and store in an airtight container in the fridge.
